I love pasta, I adore pasta, I cannot live without pasta, and I eat pasta at least once a day! More and more I prefer the lighter versions of pasta recipes, just like this Red Cabbage Pasta with Roasted Red Peppers, without meat, combined with vegetables and flavored with herbs and spices. Most of all I like whole wheat pasta, which are, without discussion, healthier. I admit that I became slightly picky when I buy pasta. Even if I pay more, I don`t make compromises when I have to choose this product!
I do not know how this wonderful idea to combine baked peppers with pasta came to me but I do not regret it a moment! It just became my favorite pasta recipe! Red cabbage, slightly stewed, sweet roasted peppers, a little more pepper, 2-3 spoons of soy sauce and this recipe is perfect! … So delicious and very easy and quick to prepare.
Red Cabbage Pasta with Roasted Red Peppers
250 gr noodles
2 red peppers
1/2 red cabbage
3 tablespoons soy sauce
salt and pepper
Roast the red peppers on a baking tray lined with baking paper, on high heat, then cover until you prepare the rest of ingredients. (If you cover immediately after baking it will be easy to peel them).
Chop the red cabbage and fry it in a few tablespoons of water, a little olive oil and soy sauce. After the cabbage softens a little add the grated carrot.
Once you’ve boiled the noodles, add them over the cabbage, add peeled pepper strips, adjust salt and pepper and that’s it! So simple, but absolutely delicious!
