Since yesterday I`m thinking allot at those 3 vacation weeks that will come after these 2 weeks of impatience. I don`t know yet how will I spend all this free time but I certainly hope to do lot of things (tells the woman for whom 40 hour per day wouldn`t be enough).
Dreaming at the holiday period approaching soon and with my eyes on how beautifully is snowing outside I was thinking that nothing would be more appropriate that to tell you about this warm roasted potato and bacon salad. This easy recipe is on my list of recipes that can be prepared in those moments when you don`t have too much time but you would crave for something delicious to eat.
I think that roasted potatoes and cold winter days were made one for each other. And if you add some bacon, onion and some rucola leaves you just prepared a perfect warm salad.
Warm roasted potato and bacon salad
2 pound potatoes
200 gr bacon
1 red onion
1 garlic clove
Rucola leaves
Oil
Rosemary
Salt, pepper
Homemade mayonnaise (optional)
Pickled peppers (optional)
Cut the peeled potatoes diced or sliced, put them in a pan with some oil, sprinkle over some rosemary and salt and bake them until they are slightly golden. 10 minutes before removing the potatoes, add to pan the thin slices of bacon.
Caramelize the onion in some oil and add chopped garlic. Mix onion with roasted potatoes and bacon and add the rucola leaves, washed and drained of water. Adjust salt and pepper.
If you want, you can add a few tablespoons of homemade mayonnaise and some slices of pickled red pepper.

Who knew that a potato salad could look so pretty! Love the rucola leaves – so hard to find them in stores!
