One more year and a yellow bean pods and pea salad
by Monica Lazăr on January 27, 2013
It was a full but lovely week which had its peak on Friday, the day that I felt wonderful thanks to beautiful people that made my birthday happier. One more year…allot of new and beautiful things.
Last year I wished and I received a camera, as a gift. I do not know what was in my mind when I expressed such a desire, since, until then, I had not even minimal contact with this domain. But I can say that, except my dear pig (a Guinea pig ) that I received as a gift, four years ago (and, unfortunately, passed away…), the camera is the best gift received until now. And not the camera itself but everything that brought into my life: all the new things that I`ve learned, those new people that impressed and inspired me throughout this process and especially, this camera showed me a great way to express my creative side that I knew it lies inside me, but which, until now, I did not know to develop.
I’m starting to feel happier and more and more confident doing this. I like it so much! I’m excited to receive always a simple and positive reaction to my effort.
I cannot wait to tell you all about how this process takes place, from a recipe idea to the final picture, but for now, I still keep looking for a little more confidence. So, while letting confidence grow as yeast dough, I present you a simple recipe that betrays my desire for a warm and colorful season, rich in fruits and vegetables. This pea and yellow beans salad is flavored with garlic, because garlic is a pleasant “partner” for pea, the same way that fresh dill is for yellow pods. It is a quick and easy meal, nourishing for the body but also for our tired of white and gray eyes.
Yellow bean pods and pea salad
300 gr bean pods (frozen or fresh, yellow or green)
300 gr frozen peas (or fresh in season)
1 red pepper
2 green onions
2 cloves of garlic
Boil peas and pods of beans (careful not to overcook them or it will shatter).
Dice red pepper, green onion and garlic and fry them in 2 tablespoons of olive oil, no more than 2-3 minutes, just to release the flavor.
Mix with peas and beans and add chopped dill and spices.
Adjust salt, add more olive oil if you desire and enjoy the simple and healthy taste.
